One of the many legacies of ancient Rome is its unique cuisine. The creative combination of flavors, distinctive preparatory techniques, and sometimes elaborate presentations, undoubtedly discerned the Roman palate.   Successful foreign trade from all corners of the Mediterranean had supplied wealthy Romans with many exotic ingredients, and provided cooks with endless possibilities in the culinary arts.  Yet, while new and exciting delicacies were being prepared, many rustic dishes remained favorites and even characterized the pious Roman.   Simple and hearty fare was synonymous with many Roman ideals and principles.  Native dishes served as a reminder of the rural beginnings of the Latin peoples, and the indigenous practices of the Religio Romana.  

The association of the earth's bounty with the gods was a recurring theme in the numerous agricultural festivals and customs that filled the Roman calendar throughout the Empire's history. The gods were believed to preside over fields and crops, and farmers sought divine intervention to ensure successful yields.  The offering of food to the gods was a vital source of spiritual communion in forming the basis of the Religio Romana. The Temple of Religio Romana recognizes these sacred observations which filled Roman life and affirm what the Romans believed:  that the fertile lands of Italy, and the foods they provided were gifts of the gods--bestowed in sanctity, for universal enjoyment and well-being.
